I love this viral potato sandwich. I thinly sliced potatoes, overlapping them on a parchment paper covered baking sheet in four rows of six. I added olive oil, salt and pepper, and plenty of shredded mozzarella. Bake at 400 degrees for 25 minutes (depending on the thickness of the potato slices), or until the cheese is golden and bubbling, then remove and let cool slightly.
